Shakshuka has quickly become a Saturday brunch staple in our house. Often times I find myself falling asleep on Friday nights thinking “YES, tomorrow is Shakshuka day!” Trust me, it’s that good.

For those of you who may be unfamiliar, Shakshuka is a dish made with poached eggs in a spicy tomato base that was popularized in the Middle East and North Africa. It is perfect for any meal and super quick and easy to whip up.

While the weather in the Bay Area has been pretty perfect (per usual), we are both East Coast natives so we still have a couple cold weather traditions that we just can't give up. One of our favorite things to do in the winter is to cook up a big batch of homemade chili!

Recipe: The Sweet Green Smoothie

With the Holiday's right around the corner (crazy right?!), we know we will soon be stuffing our faces with delicious sweet treats.  From Halloween candy, and Thanksgiving pies to never ending Christmas cookies, we are both extremely guilty of giving in to our sweet tooth cravings. So to get ahead of the inevitable, we are creating healthy options to hopefully satisfy some of those cravings.  

 This Sweet Green Smoothie is addicting! It has quickly become a breakfast staple for me. Lately our apartment has turned into a smoothie shop, we have been testing out all kinds of combos which we are very excited to share.

Recipe: Light Egg Salad

When it comes to egg salad in our house, we agree to disagree. Alec may have a slight fear of mayo. 

I always find that egg salad is one of those recipes that can be really fun to mix and match ingredients (avocado and bacon being a favorite).  However I am excited to share this classic egg salad because it is not only light but so easy to throw together for a perfect weekday lunch or weekend picnic!

Growing up, my dad and I had a slightobsession with Japanese food (and still do).  We've never said no to a sushi night! From top rated restaurants like Nobu in NY to hole in the wall, all-you-can-eat hidden gems, we've tried it all!  

While I know it is not authentic Japanese food, I am not ashamed to admit that Kani Salad is one of my favorite Japanese restaurant appetizer.  Made with only a few ingredients, this salad could not be easier to throw together!

Recipe: Classic Chicken Noodle Soup

Classic Chicken Noodle Soup aka a giant bowl of comfort. This recipe is so quick and easy you guys! 

For this recipe we like to make our chicken extra tender so we can shred it up for the soup. We use a slow cooker and let the chicken cook for at least 2 hour on high or 4 hours on low. This is actually our go-to way of making chicken for any dish.  Running low on time? Grab a rotisserie chicken from the grocery store, shred it up and throw it in!  

When it comes to the egg noodles, we welcome them. More is better! However if you are looking for a less noodle-y soup, only add half the amount as instructed. You can also use any other kind of pasta to substitute if you don't have egg noodles.

Happy National Tortilla Chip Day! Although we are not sharing a recipe for tortilla chips, we are sharing a recipe for the tortillas perfect match!

Talk about easy! A few ingredients is all it takes to create this fresh and uniquely flavored salsa.   This recipe is the perfect blend of sweet and savory and can be paired with tortilla chips, a topping on your favorite taco, or tossed into a salad. 

While this salsa is so simple to make, there is nothing simple about it! 

For best results we like to use sweet corn straight from the cob - however you sweet canned corn will work as well!

We are obsessed with nachos and always looking for new fun ways to change them up, from BBQ pulled pork nachos to s'mores dessert nachos - we have tried them all.  

However, what are you suppose to do when you are craving nachos but also trying to stick to your New Years resolution of a healthier 2017?  The answer my friends- is cauliflower! 

Cauliflower has quickly become the new kale. All the rage, it has taken over as a replacement to those unhealthy (yet so delicious) carbs we know and love.  We have seen cauliflower everywhere, cauliflower pizza crust, cauliflower mash, even cauliflower "chicken" nuggets.  

For these Cauliflower Nachos we used cheddar cheese, red onions, sweet corn, tomatoes, pineapple salsa, sour cream, avocado and fresh cilantro.  However when it comes to toppings you can be as creative as you want! The possibilities are endless.
