Shakshuka has quickly become a Saturday brunch staple in our house. Often times I find myself falling asleep on Friday nights thinking “YES, tomorrow is Shakshuka day!” Trust me, it’s that good.
For those of you who may be unfamiliar, Shakshuka is a dish made with poached eggs in a spicy tomato base that was popularized in the Middle East and North Africa. It is perfect for any meal and super quick and easy to whip up.

For this recipe we like to make our chicken extra tender so we can shred it up for the soup. We use a slow cooker and let the chicken cook for at least 2 hour on high or 4 hours on low. This is actually our go-to way of making chicken for any dish. Running low on time? Grab a rotisserie chicken from the grocery store, shred it up and throw it in!
When it comes to the egg noodles, we welcome them. More is better! However if you are looking for a less noodle-y soup, only add half the amount as instructed. You can also use any other kind of pasta to substitute if you don't have egg noodles.
