However, what are you suppose to do when you are craving nachos but also trying to stick to your New Years resolution of a healthier 2017? The answer my friends- is cauliflower!
Cauliflower has quickly become the new kale. All the rage, it has taken over as a replacement to those unhealthy (yet so delicious) carbs we know and love. We have seen cauliflower everywhere, cauliflower pizza crust, cauliflower mash, even cauliflower "chicken" nuggets.
For these Cauliflower Nachos we used cheddar cheese, red onions, sweet corn, tomatoes, pineapple salsa, sour cream, avocado and fresh cilantro. However when it comes to toppings you can be as creative as you want! The possibilities are endless.
