Happy New Year!!! It is officially January and the cold/rainy weather has really started to kick in (even out here in California). So, we are kicking off 2017 with a cozy and perfect winter weather dish - Homemade Shepherd's Pie.
This recipe is inspired by our recent trip to Scotland (where Alec's family is from). Shepherd's Pie is a Scottish dish using lamb- not to be confused with "Cottage Pie" which uses beef. Historically, Shepherd's Pie was a meal thrown together using leftovers and whatever vegetables were accessible- so feel free to get creative and add in whatever favorite veggies you have at home. And because it is loaded with so many delicious veggies, this recipes can also be easily made into a vegetarian dish by simply removing the lamb and replacing the chicken broth with vegetable broth.
